It’s quick to make, super easy and tasty, very healthy and fairly inexpensive as well. Also it’s suitable for all the veggies out there.

Preparation Time – 25 minutes
Cooking Time – 55 minutes
Serves 6
2 tablespoons of olive oil
75g carrots, diced
1 stick of celery, chopped
50g onions, chopped
1 tablespoon rosemary
Clove of garlic
400g borlotti or pinto beans, drained and rinsed
1 pint of tomato passata
300ml of vegetable stock
1 teaspoon caster sugar
125g small pasta shapes, such as shells
2 tablespoons parsley
Salt and pepper
1 – Heat the oil in a casserole dish, gently fry the carrots, celery, garlic, onions and rosemary for 10 minutes, or until softens but not coloured.
2 – Stir in beans, passata, stock and sugar and bring to the boil. Then cover, reduce the heat and simmer for 25 minutes, or until the vegetables are tender.
3 – Add the pasta, parsley and season to taste. Simmer covered for a further 10-15 minutes until the pasta is al dente.  Serve sprinkled with cheese and/or crusty bread.
