It’s quick to make, super easy and tasty, very healthy and fairly inexpensive as well. Also it’s suitable for all the veggies out there.

Cooking Time – 55 minutes
Serves 6
2 tablespoons of olive oil
75g carrots, diced
1 stick of celery, chopped
50g onions, chopped
1 tablespoon rosemary
Clove of garlic
400g borlotti or pinto beans, drained and rinsed
1 pint of tomato passata
300ml of vegetable stock
1 teaspoon caster sugar
125g small pasta shapes, such as shells
2 tablespoons parsley
Salt and pepper
